dc.description.abstractEn esta investigación se compara el rendimiento de la extracción del carotenoide licopeno del tomate chonto (Lycopersicum esculentum) usando mezclas de solventes que cubren todo el rango de polaridad. Utilizando tomate chonto sin pretratamiento alguno, se caracterizaron los extractos por HPLC y se determinó cantidad de licopeno y de betacaroteno presente en mg/L y mg/g de extracto; también se determinó la relación peso de muestra-volumen de solvente-tiempo de extracción realizando solo una etapa en la extracción. Con estos parámetros se propone un diagrama de flujo para el proceso de extracción y condiciones necesarias para evitar la oxidación del licopeno.spa
dc.description.abstract**This investigation compares the lycopene carotenoid yield extracted from the tomato (Lycopersicum Esculentum) using solvent mixtures that cover the entire range of polarity. Using tomatoes without any form of pretreatment, extractions were characterized through HPLC to determine the quantity of lycopene and beta-carotene present in mg/L and mg/g of extract. For each extraction, the relationship between sample weight, solvent volume, and extraction time were also defined. These parameters were used to design a flow chart for the extraction processes and the necessary conditions for avoiding oxidation of the lycopene.spa
